Roasted Cauliflower Frankenstein Soup

Entertain your friends this Halloween with a bell pepper bowl filled with this vegetable protein packed soup. The moment they take the head off, it will be as if they are dining on Frankenstein Brains {considered a delicacy in some parts of this world}.

Each slurp will be filled with satisfaction and delight. No one ever knew that their vegetables could taste this freakishly good!

The severed fingers add such a creepy yet classy touch doesn’t it? Your friends will thank you for it.

Roasted Cauliflower, Garlic and Swiss Chard “Frankenstein” Soup Recipe

Gluten, egg, and dairy-free

Serves 6 Bell Pepper Bowls

INGREDIENTS:

  • 1 head of cauliflower
  • 3 cups vegetable broth
  • 2 cups swiss chard
  • 8 cloves of garlic
  • 2 Tb olive oil
  • 1 tsp thyme
  • 1/2 tsp salt
  • Bell Peppers for Bowls
  1. DIRECTIONS:
  2. Preheat oven to 425 degrees.
  3. Cut up cauliflower head into florets and place in a medium bowl with garlic cloves (skin still on). Toss with olive oil and salt.
  4. On a baking sheet, roast for 25-30 minutes or until a nice brown sets in.
  5. Set garlic aside and allow to cool. Peel skins off of garlic.
  6. Place cauliflower, chard, vegetable broth, garlic, and thyme in a pot and boil to a simmer for 10 minutes.
  7. Remove from heat. Using an immersion blender, blend up soup until desired consistency is achieved.
  8. Serve up in bell pepper bowls and serve immediately.

    • The finger is definitely purchased. I believe I bought them at the 99 cent store. Feel free to purchase them and serve with the soup 🙂

  12. Nice recipe but one could also cook steam and mash the cauliflower or make soup with it and the rest of the ingredients and not bake the entire dish (Bell pepper).. No need to destroy any more nutrients and minerals!! RAW FOODS RULE!! Still love the recipe!
