Vegan Almond Joys

It’s Friday…

(Friday, Friday, gotta get down on Friday)

Just like the crispy corner edges of brownies tend to be overlooked

for the moist, inside squares;

so are Almond Joy candy bars

for the more chewy, caramelly and texture-induced

candies.

Thank goodness that I love the corner pieces and Almond Joys!

Why?

That means more for me.

The fact that Almond Joys get a bad rap bums me out.

Why the hate towards the loveliest of candies, friends?

Coconut.

Chocolate.

Almonds.

It’s the trifecta of bliss, really.

My mouth is literally watering as I look at this picture.

(Mind you, I have a whole batch in the other room but I’m too lazy to get up.

I prefer to adore them from afar for now).

So throw your coconut-loving friends a bone here

and make them some of these this Halloween!

They will love you for it.

Almond Joy Recipe

Makes approx. 15ish bars

INGREDIENTS:

  • 1/2 c. shredded coconut + a dash on non dairy milk (optional)
  • 15 almonds
  • vegan chocolate (to be melted)
  • candy mold

DIRECTIONS:

  1. Blend your coconut for a good 5 minutes until almost smooth. Add a dash of non-dairy milk to help it along if needed.
  2. Roll blended coconut into small balls, place on wax paper and freeze for 15 minutes. *8(see note if you are not using a mold)

     3. Flatten balls out once out of the freezer.

4. Coat mold with a thin layer of chocolate. Place almond in it’s spot; then place flatten coconut on top. Cover the remainder with   chocolate. Freeze 10 minutes and then remove from mold.

**Note: IF YOU ARE NOT USING A MOLD: instead of rolling coconut into balls, form into approx 2 in rectangles with your hands. Place an almond on top–press down gently to secure and freeze 20 minutes.  Carefully dip into bowl of melted chocolate, coating each side with a spoon. Place on parchment paper and freeze until set (10 min).

To me, these are like the Klondike Bar.

    what kind of blender do you have? or did you use a food processor? and how soft should the mixture be when it’s ready to be shaped? was it still crumbly/flaky at all? how much “milk” would you consider a “dash”?

    man, sorry for so many questions for such an easy-looking recipe! 😛

    i tried blending these with a regular blender and had to continually scrape the sides – like every two or three seconds. i added a dash of soymilk then a little more and then a little more. scrape-blend-scrape-blend-repeat. 😦 i gave up after a bit and just formed them the best i could. i only ended up with six tiny “patties”, though.

    i’m sure they’ll still be good… but HEEEELP! 😉

    • Hi Nikki! Sorry for the vague instructions 😦 I don’t have a fancy blender, in fact I just used my Cuisinart “bullet” style blender. But yes, what you experienced was supposed to happen. It takes a long time to blend until it becomes smooth. Like, 5 minutes-ish in addition to the scrape-blend-scrape-add a little milk (like 1 tsp at a time)-blend, etc process you familiarized yourself with 🙂 I wouldn’t sweat it really because as long as you form a patty, you are a-ok. You don’t want it too crumbly/flaky so add a little more milk to make smooth if needed. It’s just the name of the game with coconut. Right when it feels like nothing will ever happen, it happens. ha. Does this help at all??? Let me know! I know how frustrating this kind of stuff can be…. xo, Cara

        thanks, cara. 🙂 i would generally be fine with the scrape-blend-scrape process, but since the coconut is so fine… and there’s such a small amount… and since my regular blender is the typical “cone” shape… it was a long reach trying to stick a spatula down inside and frustrating trying to scrape it out from around and underneath the blades! aaack! lol.

        they still came out good (even if only half the amount i was hoping for), but i really think i need a different kind of blender! or maybe i should have just kept adding more and more milk. i *might* have been a little paranoid about it turning into coconut *mush* instead of joy. 😉

    My favorite. I make some version of these every year. This year I’m doing yours because all that powdered sugar is G-R-O-S-S. Besides, I have to say this. Sometimes you feel like a nut, sometimes you don’t. Mounds bars rule!

        Yes and their name is Al. He’s 6’5″ and weighs 350 lbs. because he’s bigger boned than anyone you’ve ever seen. So yeah, I make both. Although they melt in your mouth much better without the Nut!

  17. Ok, another favorite candy bar of mine – a childhood favorite! I’ve made these before but never thought to blend the coconut! You’re just too smart for me. And you’re making me realize I really need to invest in a candy mold.. ughhhhh

    PS – I will start vegan/gluten free baking once MoFo is over, loooooove!

    • Chances are, everyone will be disappointed because it’s not a pie so just think of how MANY will be left for you!!! And I’m with about choosing Mounds over Almond Joy–I will eat anything if it has almonds in it. Almonds make everything taste better 🙂
