The Perfect Waffle

My roommate’s eyes widened as the brilliant idea came to her mind as we stood in the kitchen. “I have THE best idea! You know what we should do Cara???”

Okay pause right here; allow me to first interject a little backgroud knowledge.

I am learning that anytime my roommate uses the word “we” while we are either in the kitchen or simply talking about food, she actually means “you”; me, Cara. So let me translate: As my roommate and I were standing in the kitchen she turned to me and said, “You know what you should do tomorrow, Cara?”

“You should totally make waffles for breakfast!”

Translation: “I’m going to need breakfast tomorrow and I personally don’t want to make anything, so I think I could really go for one of your waffles in the morning!”

Thanks to my roommate’s encouragement, I ended up making one of the best batches of my ultimate breakfast food.  But pride comes before the fall because as I sat at the table this morning, ruminating for 20 minutes over the fact that these were seriously the best gluten-free and vegan waffles I have ever made (quite possibly in the history of mankind as well), I realized that I had left one of the waffles sitting in the iron for that entire time. It gave a very new meaning to extra crispy.

Just because you can throw down a mean breakfast doesn’t mean that you should burn your house down because of it. The end.

WAHOOOOOOO!!! We ate waffles as a family for the first time in months! THANK YOU! This recipe is amazing, it came out just like I remember waffles tasting like. I even had to modify, subbing cornstarch for the arrowroot powder (I couldn’t find it last night at the store) and I learned we had to cook them longer than traditional waffles so they didnt stick in our iron. What a blessing this morning has been!

  2. OMG…. I will tell you, I have tried several gf, ef, recipes before, all the others were so thick I could not pour them in. This one looks just like a regular batter would, hands down the best one we have tried! Thanks a million! Both my 5 year old son and me have various allergies, it is soooo hard to find a great one, Thanks again 🙂

  6. Sounds like you both need each other! 😉
And the fact that you sat down and enjoyed your creation fully, enough to forget a burning waffle is proof they were really THAT good! 😉
    Yum!

These Waffles looks amazing, Justin has to remind me not to leave any cooking device unattended I have been known to burn a few things (thankfully just not the kitchen)in my day 🙂 The worst cooking on the grille, I get distracted by my flowers and garden and completely forget what I was grilling in the first place

You always seem to save me every time my mouth goes “hmm, I feel like…(insert said dessert/baked good/breakfast food/meal here.” Then Cara goes, “I will come up with an allergy free and better tasting (insert said dessert/baked good/breakfast food/meal here.” It’s a beautiful cycle…

    July 18, 2012
    • Great minds think alike, right? 😉

    July 18, 2012
    • HAHA! I could never imagine you going apesh!t on anyone, Brooke. But the mere thought of it is making me giggle…

I can see the headlines now – “Princess Fork, Queen of the Universe Enjoys Ultimate Waffle as House Burns. Story at 7:00.” I can see I’ve made a tragic mistake. Had I moved to California rather than Texas I could have been the persuasive roommate with the personal chef. Darn. Where DID I leave that time machine?

    July 18, 2012
    • You better find that damn time machine stat, Laurel! Or better yet, we will just make an extra room for you by next week 🙂

  18. Haha I can totally relate to your relationship with your roommate- mine used to tell me we should make cookies all the time. Well, we all know only one person ended up in the kitchen and it sure wasn’t her 😉

I love waffles, I wish I had a waffle iron so I could try these!

    July 18, 2012
    • Gabby, it should be illegal that you don’t have a waffle iron! Looks like I know what I am sending you for your birthday… 🙂

      July 18, 2012
      • Laurel #

Well, if that’s the traditional birthday present… I need a laughing hyena icon.

        July 19, 2012
