Cookie Dough Ice Cream, yo

I imagine the idea of creating an ice cream flavor full of cookie dough came from a little kid who, while eating an ice cream cone, went to scoop out a finger-full of his mom’s homemade cookie dough, only to find a piece of it plopped down onto his cone.  Bothered at first, he looked down to see his predicament.

Cookie Dough Ice Cream Recipe

Gluten, egg and dairy-free

Adapted from Corrina Darling’s Cookie Dough Hummus

INGREDIENTS

  • 1 pint non-dairy vanilla ice cream
  • 1/2 can chickpeas, rinsed and drained
  • 1 c rolled oats
  • pinch of salt
  • 1/2 c brown sugar 
  • 2 tsps vanilla extract
  • 2 Tb applesauce or oil
  • 1 c. Enjoy Life chocolate chips

DIRECTIONS

  1. In food processor blend chickpeas, oats, salt, baking soda, sugar, vanilla, and oil.  Blend until smooth, yet thick enough to form into a ball.
  2. Fold in chocolate chips.
  3. Place in a bowl and freeze for 10 minutes.
  4. Roll out into small balls and throw into pint of softened non-dairy vanilla ice cream carton. Re-freeze until solid.

Unable to remove it with his hands, his only choice was to pick up the cookie dough with his mouth. Simultaneously he managed to scoop up a slurp of vanilla ice cream along with the dough and as the flavors mixed around in his mouth, his eyes widened. Had he just accidentally created the world’s greatest ice cream flavor?

Without a doubt.

    • You know, I won’t lie, you can taste them slightly. However, once you throw the chocolate chips in, freeze them with the ice cream, it really goes away.

  5. Chocolate chip cookie dough has been one of my longtime favorites. Love cookie dough, love vanilla ice cream – done and done! I made a similar chickpea-based cookie dough from Chocolate Covered Katie, and it was amazing. Looking forward to trying this dreamy, creamy concoction!

    you made me curious who invented cookie dough ice cream because i was pretty sure it was first available through ben and jerry’s. and yes they are taking all the credit for it. awesome that now there are even commercial coconut dairy free ice creams with gluten free cookie dough chunks in them. love it.

    • That’s what I’m thinking too! Not sure why mothers keep their children out of the kitchen when they are truly concotion geniuses!

    What about mixing together the ingredients for home-made vanilla ice cream and the cookie dough thingies, freezing it and then smashing the mixture into our beloved blender ? =)

    The best thing about making your own cookie dough ice cream – you can make it anyway you like it, me personally I would go with the 70% cookie dough to 30% ice cream ratio – what can i say I like my cookie dough 🙂

  16. what a brilliant little kid:) Choc chip cookie dough is one of my 2 favorite ice cream flavors! i always get it in a bowl, and eat around the cookie dough, saving it for last — haha — thanks for sharing — this looks outrageously delicious — as always:)

  17. you know, i only remember eating cookie dough ice cream once at my best friend’s house in like 4th grade. i remember thinking, “why don’t my parents buy this kind??” but i knew the answer- not enough chocolate! my parents only bought breyers chocolate or death by chocolate or rocky road.

    nowadays, i buy cookie dough ice cream for dayv and he loves it. i think it’s pure decadence brand. i should try making your chickpea version, though! i am loving that idea. seriously, what CAN’T chickpeas do?! one amazing legume 😉

    You’ve got to have a halo you’re hiding somewhere on your person. How do you even have ice cream left to soften and add things to? Nope. Store bought gets eaten directly when it gets home because it’s usually at that perfect just soft enough stage. I’ll save the cookies for later. Well, if I could eat chickpeas or oats. I love the little boy story. Won’t you drop a Trader Joe’s in my backyard? There’s someone back there with ruby slippers who could use an attitude adjustment. Who am I kidding. I just want the slippers. And Ice Cream!
