The Hostess with the mostest

The funny thing about your emotions is that

you have to deal with them.

When we are either unwilling or incapable of dealing with our emotions,

we generally find ourselves led into some sort of vice in order to cope.

In fact, I would say 99% of all our vices

stem from our inability to face our feelings,

(which, by the way, inevitably leads us to the next 25 years of our lives

making Resolutions to break said vices).

Enter Hostess Cupcakes:

Clearly, growing up, emotions weren’t something I was well acquainted with.

Which is why anytime I felt an emotion coming up,

I quickly shoved it back down with food.

Like, with Hostess Cupcakes.

Thankfully I have learned through the years that vices

never solve anything and that the emotions still stick around.

You either learn to deal, however how hard it may be,

or watch yourself disappear.

So last night as I said good-bye to Greg at the airport

I found that this time was particularly difficult for me.

The old Cara would have eaten 4 of these cupcakes until she felt

nothing but guilt from knowing she just broke her New Year’s Resolution.

The real Cara (because I am convinced that those vices are formed by our false selves)

simply cried on the way home. Aaaaahh, emotions, yes–there you are!

Much happens when you face your feelings.

Like, you don’t eat as much.

It’s a wonderful thing really. Freedom.

Hostess Cupcake Recipe

Gluten-free, vegan

Makes 24 mini cupcakes (or 12 regular cupcakes)

For the cupcake:

I used my Chocolate Quinoa Cupcake Recipe in mini cupcake form. Allow to cool a good 25 minutes.

For the filling:

Richmellow Creme– in a piping bag (or a plastic baggie–what I used–make a small slit in the corner, place the top of a decorating tip in the hole., place the Creme in the bag with a spoon, pierce the center of the cupcake and fill with creme.

For the Chocolate Ganache:

  • 1/2 c. Enjoy Life chocolate chips
  • 2 Tbs MimiCreme (God’s gift to vegans)
  1. Warm both ingredients in a microwave safe bowl for no more than 1 minute. Stop after 30 seconds and stir.
  2. Dip each cupcake for a thin layer by swirling the tops into the bowl of chocolate. Allow to set for a few minutes.

For the frosting:

  • 3 Tbs Earth balance or shortening
  • 1 c. powdered sugar
  • 1 Tb. non-dairy milk
  • 1 tsp vanilla extract
  1. In a bowl, combine all ingredients together gently with an electric mixer until fluffy and smooth.
  2. Pipe into a pastry bag or baggie (same method as the filling) and pipe squiggle lines on top of the cupcake.

Speaking of freedom, I think I owe you the freedom of:

      January 9, 2012
  4. Awesome. Now I want one of those =/.

    January 9, 2012
    • Well, isn’t that just timely! Now you have a recipe to use to make them 🙂 hehe. Or you could just go to the store and buy one (that is, if you can have gluten and dairy–lucky, if you can!) xo

I just have two questions: will Mom be participating???? And remember when we used to find hiding places for the arm to try to scare the poo out of each other??? Haha. Good times. PS- Sorry that Gregorio had to go back. 😦 What does one do when she actually let’s OUT her emotions AND THEN goes home to eat fifty of these chocolate bad boy beauties??!!

    January 7, 2012
    • That would be FUN if Mom participates, huh? I think YOU should regardless!
I miss the fake arm. Sigh. Maybe I will ask for one next Christmas…

      January 7, 2012
  7. Your biggest fan! #

Oh Sweetie, I read your intro and cried. I know how much you miss him when he’s gone.
Then, I saw the cupcakes and I too wanted to lick the screen (like someone else said above).
Those cupcakes used to be one of my “go to” emotional foods. These look so much better!
Your contest….loved the video – It kept me on the edge of my seat! fabulous idea! And what a great prize offering! wow!
Loved the “Better Cheddars” also. That was one of my faves (I probably washed down the cupcakes with those (you know the whole *salty*sweet* thing.
Tell AnonymousBurn I’m getting out the Lifeboy!
Hey! what ever happened to that arm? 🙂
Now bring on the competion looking forward to seeing the entries!
    Love you!

    January 6, 2012
    • Mom, you can’t wash the mouths of everyone. Only mine. And even then you couldn’t 🙂
The fake arm has been tossed, unfortunately–all the talk of it and it makes me miss it. Remember I used to hang it out of my car trunk? Aaaaah, those were some fun times. hehe.
And don’t get too close to the screen lady. You might electrocute yourself 🙂 Love love love YOU! xo

  8. This post was so bittersweet: on one side, I am sorry to hear you are notvery happy at the moment, and on the other I am thrilled by the bake-off. I don’t think I will enter though, however I can’t wait to see all the contestants 🙂

    January 6, 2012
    • I was just on my way to your blog to ask you to enter, actually! I think you would be SUCH a great contender; you are so talented! *batting eyelashes* Who doesn’t love a good challenge and $75??! eh? eh? hehe

      January 6, 2012
      • Oh now, the power of the battling eyelashes! It would be very very terribly terrible of me to say no, so I will better get to work, fast!

        January 6, 2012
        • Did it *actually* work?!!! Holy cow, I just fell off my seat! REALLY? Oh. My. Goodness. Everybody, beware. My Lovely Bites is going to do some serious damage!

          January 7, 2012
  9. Sorry to hear about your sadness at Greg leaving 😦 I hope he comes back soon and that you feel better soon as well. I’ve always read about hostess cakes (grew up reading Archie comics in Singapore) but I’ve never tried one.

    January 6, 2012
  10. oooh very intriguing!

    January 6, 2012
    • Intriguing enough to get a recipe submission from you??? wink wink

      January 6, 2012
      • i’m thinking i’ll give it a go ;D can it be raw?

        January 6, 2012
        • YAY! So happy to hear this and absolutely, it can be raw!

          January 6, 2012
  11. 1. Cupcakes! YUM!

    2. CONTEST!!!111! I love the suspenseful music. V-Day desserts are serious business. I’m going to have to sleep on this one and think of some good ideas…

    January 6, 2012
    • 3. And in the midst of my excitement over the first two things, I forgot to say… big hugs re: Greg leaving again.

      January 6, 2012
    • I figured either “The Rose” by Bette Midler or the theme song to “X-Men”… Sappy vs. Suspenseful… that was a no-brainer 🙂 xo Think, think think!!

      January 6, 2012
  12. SHIT! I am blocked access from your video from my work computer. After work I’m rushing home to meet the girlses boyfriend and his mom at an impossible time to make after work for some puppy love and then climbing. It will be damn near 11pm when I can finally have my curiosity sated.

    January 6, 2012
    • BAHAHA! Remember? Karma’s a bitch 🙂

      January 6, 2012
      • Damn and blast you, Graham Crackers!

        January 6, 2012
        • Do you hear that? That’s the sound of graham crackers snickering…

          January 6, 2012
          • Just saw the video…finally…

That’s such a great idea! I’m excited to see the winners while I drool over their photos.

Wheat Thins and Figgy Newtons were a hit at work amongst my meat eating, drive-thru orderin’ co-workers! So more baking this weekend to perfection and the next batch stays home with me!

            January 6, 2012
            • You made both the Wheat Thins and Fig Newtons for reals? Wow, am I super impressed–you have been a baking machine this week, then! Love it! P.S. Maybe you should reconsider and sign up for the contest yourself. Just saying… xo

              January 7, 2012
            • Heck yeah I did. Half the detox all I wanted was bready things. I made a loaf of oat bread that night, too. But then I honestly, couldn’t eat them in good faith having done so well getting my carbs from fruit the whole week before which is why they went to work. Haha!

I’m not so much creative in the kitchen but being a chemist means I’m great at following instructions. I did think about making dog treats for your contest. My girls are grain and gluten free…

              January 7, 2012
              • Seriously. Do it!!!

                January 7, 2012
  13. OK. So I’ve baked vegan (once). I’ve baked gluten free (twice). I think I know what to make but I don’t know how to make it “valentiny.” I do have some heart shaped ice cube molds. Would a recipe for ice count?

    January 6, 2012
    • WINNER! Most creative! Done. haha. You just freaking made cheese, I think you can handle this one! Give yourself some more credit, little lady 🙂

      January 6, 2012
      • Hah! Making barely edible cheese from a kit isn’t quite the same a coming up with an award winning vegan/gf recipe. But I shall forge ahead! Persevere and what not! And if it comes down to it, we’re going with the ice cubes, right?

        January 6, 2012
        • It’s all about persistence, right? No need for genius, just the ability to stick with it 🙂 I’m thinking ice cubes is going to take the sweep! ha 😉

          January 6, 2012
  14. a you are such a tease.. now we have to wait for another day to know about the judges..
b that video is like a movie trailer.. we just need flashes of Cara in a Terminator get up in between with a big funky hand blender or pastry bag, shooting away these robots/aliens whatever gooey invaders called gluten and non vegan! ha!
c you are a crazy woman, i mean you already won the contest with these hostess cupcakes..woah.. u r hosting the contest.. hostest with the mostest.. ok i should stop!
d aww hugs to u..u can have one extra cupcake..

    January 6, 2012
    • and thank you for the sweet words yesterday..:) yay for veganmofo ! and your halloween theme!

      January 6, 2012
      • Thank YOU for YOUR sweet words. Man, you got me totally misty eyed! Yay for Vegan Mofo indeed! I cannot believe how much joy it brought to me (and you!)

        January 6, 2012
    • 1. That was my nickname in high school Ha. SO kidding about that one, really…
      2. You should see the video idea I had for this song before I used it for this contest (looks a little similar to what you are talking about). Now I’m thinking I *should* do it!
      3. Crazy, now that is a nickname I know! 🙂 And you like the dual usage of the title? haha.

      January 6, 2012
  15. Your cupcakes look so delicious! You should totally enter them in this contest I just heard about. Oh, wait… That might not be entirely on the up and up. But seriously, I’m so bummed that Greg had to leave again. It sucks to be apart from the person you love. Great job on the video, though. It got my gears turning!

    January 6, 2012
    • Wouldn’t that be awesome if I took the sweep on my *own* contest?? That would be funny! haha.

      January 6, 2012
  16. omigosh, lady! that was insane! what the hell am i going to make that can compete with the intensity of that invitation?! and i can’t believe we win a giftcard! now, who are these judges? i’m a little scared!! 😯

    January 6, 2012
    • You will meet the judges tomorrow. Don’t worry, they won’t bite (you, that is, they will bite into your dessert). And you HARDLY have anything to worry about. You so have this, sister!

      January 6, 2012
      • well thank you for your encouragement! also, i just read the name of this post. it is actually one of my goals in life to be “the hostess with the mostest” 😉

        January 6, 2012
        • Hmmmmm, something tells me you are probably an AWESOME hostess. Or were you referring to the fact that you wanna be more like a cupcake? Regardless, both are true! You are sweet, delightful and something one cannot live without 🙂

          January 6, 2012
          • 😉 you make me smile ❤ thank you for being so sweet.

            January 6, 2012
            • Nooooooo thank YOU!

              January 6, 2012
  17. i’m not sure how you do it cara, but your posts always end up being equal parts touching, frigin’ hilarious & delicious. like those hostess cuppies – holy cow!
and as for that announcement, i think the most suspenseful thing of all was watching it and waiting…. waiting for your face to pop up and yell “boo!”. somehow {even though i really don’t know you that well} i expected that of you. hahaha.

    January 6, 2012
    • HAHAHA! I would have had a scary mask on as well. That, or my fake arm from Christmas circa 1995, (yes, that was an actual gift!) would have make a guest appearance to pop out and attempt to pick your nose, 3-D style. You *do* know without having to know me well. That really is all you need to know 🙂 haha. <–still laughing.
On a serious note, thank you for the incredibly sweet and thoughtful comment, Jess. That really touched my heart, you have no idea! Thank you. And I really hope you enter! Do it. Do it. Or the fake arm with show up at your doorstep and actually pick your nose in real life 🙂 How's that for a threat? ha!

      January 6, 2012
      • okay, okay, i guess i have to come up with something since you’re threatening me. geeeeze…. 😉

        January 6, 2012
        • Bake or fake (arm). You choose…

          January 6, 2012
  18. OMG this is so AWESOME- count me in!

I felt like a James Bond Girl listening to that very “Bondish” background Music 🙂

    January 6, 2012
    • Good! That is exactly what I wanted you to feel 🙂 That is one of my favorite songs from “X-Men”: makes me wanna inject myself with a superpower and save the world. Ha. But James Bond is just as good!
So happy to hear that you are up for the challenge. Feel free to spread the announcement around. The more, the merrier! xo

      January 6, 2012
  19. Props to you for dealing with emotions Cara!!!! I know that’s a HUGE step and success for you – I am very proud! It reminds me of our convo in Denver… 🙂
Love the hostess cupcakes – they look yummy! I could lick my screen!
AHHHH a baking contest – intense, competition, baking, challenge — ummm YES! I need to get started on that pronto…the store opens in several weeks and I won’t have time at all once the end of jan approaches!

    January 6, 2012
    • Thank you, friend. It means a lot when people know my story and know that this is huge compared to where I used to be in life! xo You are wonderful.
ABout the contest: You can use a previous recipe too, as long as it can be geared for V-Day 🙂

      January 6, 2012
      • And you my dear are wonderful!!!!!
question — How many recipes can we submit? 1 or more?

        January 6, 2012
        • As many as your heart can take 🙂

          January 6, 2012
          • woohoo! ….or more like how many my waistline can take hehe!

            January 6, 2012
            • Or your neighbors’ waistlines 🙂

              January 6, 2012
  20. Fantastic-o! Hostess cupcakes for the hostess of a major, revolutionary contest. It was VERY intense to watch, I was like, What’s she gonna say next? What’s next? Love it!

May your emotions fuel amazing baking feats to bring joy to the world, and may that joy return to you. Missing someone is difficult business! Hugs to you.

    January 6, 2012
    • hehehe. An intense video for an intense competition, indeed 🙂 I want everyone on the edge of their seat for this!
Thank you for the sweet words, Jenn. It totally blows to not have him here again. But like he always tells me before I leave, “Go kick some baking ass. Make me proud!” So that, I shall 🙂 xo

      January 6, 2012
  21. Laurel #

I’m so sorry he had to leave again but you handled it perfectly – you cried and made chocolate. There are no two things on this planet more soothing until you can be back in his arms again. The video with its stark white on black and intense music was pure genius. We’ll have to start embroidering big G’s on all your shirts ala Laverne and Shirley. 🙂

    January 6, 2012
    • HAHA! G-stamped shirts! Laurel, seriously, how do you come up with this stuff? Meh, he left again for another month or so–I hate good-byes. I always cry like a baby…
I thought the dramatic music would inspire those bakers to rise up 🙂 hehe

      January 6, 2012
  22. I totally understand about the vices! You should be proud of yourself for not giving in to all of those cupcakes. They look amazing tho!! MMmmm!!

    January 6, 2012
    • Food doesn’t console me like it once did (strange to say). Can you believe I didn’t really even eat any of these cupcakes either??? I just ate my graham crackers instead 🙂 Great to see your face over here, Amanda, and I hope you enter in the contest!

      January 6, 2012
  23. nice music – this is dramatic and intense!

    I can’t wait.

    January 6, 2012
    • You know why? Because Valentine’s Day is dramatic and intense! 🙂 ha. Are you thinking about entering in? If so, that would be Ah-Mazing!

      January 6, 2012
  24. Cool!!! That has got to be one of the most intense baking invitations ever. 🙂
I picture people flinging batter at each other at the end before a champion is crowned.
I’m so excited to hear more!

    January 6, 2012
    • hahaha true true

      January 6, 2012
      • I better see your recipe submission! After I spent yesterday drooling over your pics, I know you will be a good contender for the contest!!! xo

        January 6, 2012
    • HAHA!! I can just imagine that being filmed in slow motion as well. That is hilarious, Reid. I hope you enter!!
