Vegan Crunch Bars

I’ve decided to extend this entire week to more:

all rolled into one.

Today’s candy is dedicated to you,

*Hard-core Chocolate Lover*

Yeah, you know who you are–

I’m looking right at you.

And so is this:

The Vegan/Gluten-free Crunch Bar.

GF and Vegan “Crunch” Bar Recipe


  • 1 bag vegan chocolate chips
  • Enjoy Life’s Crunchy Rice Cereal (for the gluten-intolerant); Koala Crisps or Erewhon Crispy Brown Rice Cereal (for the vegan/gluten intolerant)
  • Break apart mold bought from here


  1. Melt chocolate chips in microwave. Depending on how many bars you want to make, start with 1 c. of chips at a time, melting in 30 second increments. Go for a total of 1 min 30 sec-2 minutes.
  2. Place a thin layer of melted chocolate into the mold just to get it entirely coated with it. Place approximated 1-2 tsp of cereal into mold. Gently press down with your fingers.
  3. Cover the remainder with chocolate to fill in the gaps.
  4. Freeze for 10 minutes.
  5. When attempting to remove from the molds and you are having problems, take a butter knife and gently get into the edges to help it pop out.

A rice crunch-ity center, surrounded by nothing but decadent chocolate.

This is probably one of the easier chocolate bars to make!

Don’t get too comfortable however, because the week has just begun.

Wait until you see what’s in store…

You might just want to take off of work and stay in the kitchen.

    I looooove crunchy rice cereal in desserts, more specifically chocolate! Yummmmm and awesome texture!

  5. oooh, fun, a whole week of homemade candy! One of the candies I really want to try making is Lokum, or Turkish delight. A few years ago we had a vegan candy-making party, which was SO fun – we make candy corn and chocolate covered caramels with pretty designs. It was so fancy. But, my turkish delight idea has never gone away.

    If you end up making homemade Mars bars I may end up stalking you, but not in a psycho killer kind of way, more of a I think I love you kind of way….just a heads up :p

  7. Gnom gnom gnom! I love crunch bars! I am making chocolate frogs for a Halloween party and have been debating if I should fill them with anything. Now I think I’ll do this!! Unless you come up with something better for me this week… 🙂 (Hey, lookit! I remembered!)

      • Chocolate frogs are nothing to get too excited about… I bought a frog shaped chocolate mold, that’s all… I thought they would be cute hopping around on our food table, totally forgetting the whole “Harry Potter” tie-in. I debated about putting maybe a caramel filling inside, but I think that may be more trouble than it’s worth, especially if I can do gf rice crispies… 🙂
