friday: cauliflower and asparagus soup

i was so happy to drive to L.A. today.

(okay, no one says that and to be honest, i really wasn’t happy on the 405 freeway. who ever is???)

but today was different because what awaited me in L.A. was one of my closest friends whom i adore and rarely get to see now that she lives up north. i haven’t seen her in several months (which is waaaaaaaaaaay too long!!)

do you have friends who feed your soul but live faraway? isn’t that the worst, and at times seems unfair? the majority of the people i consider to be a part of my “inner circle”–those who truly know me (you know who you are) live far distances from me. sometimes this makes me so sad because people like that are so stinking rare to find. you cannot just find anyone to completely trust with your soul and you theirs. it takes someone special. you are lucky if you have found 1. i feel so blessed when i count 3. and one of them i had the joy of visiting with.

she feeds my soul. we are made of the same blood, it seems. i love her.

and now that i am getting a bit weepy (i get a bit sentimental when it comes to my friends), i knew that tonight when i came home from coffee i would need to eat something that brought me comfort.

soup.

i realize that the majority of you folk live in a climate where it is hot during these summer months and the last thing on your menu plan is soup. unless you live in san francisco or the south bay, like me. both regions of california are continuously followed by a dark cloud of fog and gloom.

i would be lying if i said i didn’t enjoy it.  i love to wear layers of clothes and be just right in temperature. i love grabbing a pot of hot coffee, sitting outside while a mild breeze runs through and letting the warmth of the cup bring my hands back to room temperature (my hands are always cold!)

i love those moments.

living here allows me to enjoy those moments. thank you overcast clouds. who knew i would grow to love you?!

so if you are  missing someone special as i am or simply find yourself in the midst of a cold day, whip up a batch of soup.

it warms up the soul.

(granted it’s definitely not the same as a best friend but it’s pretty darn near close…)

Cauliflower and Asparagus Soup

Serves 4

INGREDIENTS

  • 1 head of cauliflower, chopped in the florets
  • 1/2 bunch asparagus, sliced into 3″ pieces
  • 1 onion, diced
  • 2 large garlic cloves, roughly chopped
  • 3 c. vegetable broth
  • 1 Tb. olive oil
  • salt and pepper, to taste

DIRECTIONS

  1. Saute onions with 1 Tb oil in a medium pot until translucent (appox 3-5 minutes). Add garlic in and cook another minute or 2.
  2. Pour veggie broth into onion and garlic mix and bring to a boil. Add cauliflower and asparagus.
  3. Reduce heat and simmer for 15 minutes.
  4. Using an immersion blender (recommended, or use your regular blender), puree the soup until you reach a consistency  you enjoy.
  5. Salt and pepper to taste.
